The story of do.t.e. wines began with Filippo Calabresi’s discovery of a vineyard in Cortona. In 2014, he recovered old plantings of Syrah and Viognier. Using grapes from 2 hectares acquired from Tenimenti d’Alessandro.
The name do.t.e. stands for ‘down to earth’, reflecting his mission statement to produce wine without the use chemical substances in either the vineyard or cellar. For the most part, his wines are monovarietal, each showing a different interpretation of his rich and varied terroir.
With this experimental approach, Filippo produces wines that can be anything from feather light and ethereal to deep and structured in texture.

Syrah and Viognier harvested together on August 20th, spontaneously
co-fermented whole clusters (full carbonic maceration) in stainless steel, 7 days of skin contact, decanted in stainless steel for 1 month. Bottled in clear glass bottle under crowncap, without clarification and filtration.
