From the French side of the Basque Country. The Arto Gorria, or Grand Roux Basque (The Great Basque Red) is a ancient variety of corn that was revived by a number of local producers and chefs. Grown without any chemical inputs, certified organic, it shows an amazing, distinct nuttiness. Cook in a broth, milk and/or cream, and serve with grated hard cheese and briefly poached greens. Alternatively, cook with high quality nut milk, vegetable broth and serve with mushroom and truffle oil.
